About this place
Lift your chopsticks through the blanket of sweet-savory pork and sliced scallions, and an astonishingly thick, hearty soba emerges from below. At Teuchi Soba Iriya Kadoman (手打ちそば 入谷角萬), the signature cold dish known as Hiyashi Nikunan—affectionately shortened to 'Hiyaniku'—departs from standard noodles made for light slurping, offering instead a uniquely firm, substantial chew. The exceptionally firm, springy noodles latch onto a slightly sweet broth deeply infused with the savory richness of pork, while crisp negi green onions provide a refreshing counterpoint.
Diners seeking a heartier portion can opt for an oversized serving known as 'Hiyadai', or customize the bowl with extra pork or additional green onions. A raw egg can be added to round out the flavors with silky richness, while red pickled ginger provides a sharp, cleansing accent to tailor the bowl to personal taste. The kitchen also caters to different seasons and cravings with hot Nikunan Soba, dipping-style Niku Seiro and spicy Karami Niku Seiro, as well as Curry Nanban Soba available during the evening and colder months.
Seating inside revolves around large shared tables, creating a lively, unpretentious dining room where solo guests can easily drop in and feel welcome. While lunchtime is defined by diners focused on quick, generous bowls of noodles, weekend and evening service allows space to linger over itawasa fish cake and fermented cucumber pickles alongside beer or sake before the final bowl. Pouring hot sobayu into the leftover broth after finishing the noodles is the classic way to wind down the meal and savor every drop of seasoned dashi.
